| Sole with delicious herb sauce | |
The
delicious sauce enhances the taste of sole, making it almost irresistible!

ml (2 Tbsp) olive oil
30
ml (2 Tbsp) butter
2
fresh medium soles
2
spring onions, chopped
Herb
sauce

ml (3 Tbsp) butter

ml (3 Tbsp) cake flour

ml (1½ cups) milk

ml (¼ cup) Simonsvlei Classic Chenin Blanc

ml (2 Tbsp) chopped fresh mixed herbs or 10 ml dried
salt
and freshly ground black pepper to taste

Heat oil and butter in a large heavy-based pan. Fry soles on both sides until
golden brown. Add spring onions and sauté lightly. Set aside.

Sauce: Melt butter in a heavy-based saucepan. Add flour, stir for about 1
minute, add milk and wine and whisk continuously until sauce is smooth and
thickened.
3.
Add herbs and seasoning and serve warm over fish.
